5-7 large Yellow Squash
1/2 onion
2 cups sharp cheddar cheese
2 TBS butter
2 1/2 sleeves Ritz crackers (crushed)
2 eggs (beaten)
3/4 cup milk
Preheat Oven 400
Cut squash into 1/4" pieces (little fatter than quarter sizes) and finely chop onion into little pieces. Mix together in saute pan with 2TBS of butter...cook on medium heat with the lid on stirring occasionally until squash is "see through"
While squash is cooking put RITZ and CHEESE in a large gallon bag and mix together
Spray 9x13 pan
Now pour squash/onion into 9x13 pan..now pour in 3/4 of the cracker/cheese mix into squash. Mix together now pour eggs and milk into mixture and mix thoroughly. Once all mixed together pour remaining 1/4 mixture of cheese and crackers on top.
Put into oven for about 25 min until golden brown!!
